    Phenomenal

    After a few months, I can honestly say this is finest knife I’ve ever owned. I was a bit intimidated by the length and white #2 core steel at first, as my last gyuto was 210mm R2 and required very little maintenance. It’s nothing to worry about. Just wipe it down with a wet rag, then remove all moisture from the blade using a dry rag after each use and there won’t be any problems! The profile is perfect for me. I much prefer a flatter profile on a gyuto as I primarily push and pull cut, and the Yoshi delivers that big flat spot gyuto profile exactly how I like it. The geometry is out of this world. It’s so thin behind the edge and goes through pretty much anything with ease. Sharpness straight out of the box was simply astounding. Not to mention it’s a stunning piece to behold. If you’re on the fence like I was - just do it. You won’t regret it. There is NOTHING quite like a Yoshikane.

    fit and finish of blade and handle was excellent. Knife was razor sharp out of the box. This knife is a definite step up from factory knives.
