    Great knife

    I currently have 5 Yoshikane knives and love them. I mainly use a push chop or slice to prep my ingredients. They have a little more heft than my other hand forged knives (Enso and Zumba). The extra weight and razor sharp blades makes prep easy and fun. The knife does all of the work. I have a lot of $300 to $500+ knives and this brand is my favorite. The carbon steel takes a little more care, but the performance is worth the extra care.
