    I have a collection of 60 kitchen knives, including 14 Yoshikanes, and Yoshikane is my favorite knife maker. For context, my collection includes knives from Enso SG2, Enso Hand-Forged Aogami Super, Enso HD, Enso Blue Carbon, MAC Professional, Zuma, Hatsukokoro Shinkiro, Hatsukokoro Kurogane, Hatsukokoro Ryuhyo SG2 Kurozome Damascus, Nigara SPG STRIX, Nigara Migaki Tsuchime Aogami Super, Shun Shiranami, Moritaka Aogami Super, Miyabi Koya, Miyabi Mizu, Ittetsu Ginsan Nashiji, Senzo Professional SG2, Zwilling Pro, and Wüsthof Partner. So I have a fairly broad range of knives to compare them against.

    What makes Yoshikane special to me is the way they combine substance, geometry, and cutting performance. They don’t feel like extremely light lasers. There is enough thickness and weight near the spine to give the knife a solid, substantial feel and good feedback in the hand, but the grind becomes remarkably thin behind the edge. The result is a knife that feels substantial when you pick it up but glides through food with very little resistance. That combination is surprisingly difficult to find.

    I also really like Yoshikane’s blade profiles. I primarily push cut, and their relatively flat edge profile gives me a long, useful section of edge contacting the board. There is very little unnecessary…

    Amazing Knife

    The SKD is ridiculously razor-sharped that really gives you that hot knife through butter feeling. Aesthetically pleasing, good weighty feel, without feeling too heavy and minimal effort when slicing.
