The MinoSharp III Ceramic Water Stone Sharpener has 3 sharpening wheels, one rough, one medium and one superfine. If you have ignored your knives for years and they cut more like a butter knife than a kitchen knife, we strongly recommend this sharpener.
Directions
Pour water into the compartment of the sharpener and keep it there during sharpening operation. The water in the wheel compartment serves always to rinse the revolving ceramic whetstones and to prevent over-heating the knife blade. The sharpener should always be rinsed with clean water by removing the cover after use.
To keep the sharpener steady, firmly grip the handle with one hand. Hold your Global knife with your forefinger on the back of the knife and place the knife blade vertically into the Coarse Blue Wheel. Move the blade back and forth with slight pressure 7 or 8 times (15 strokes with other knife brands), or as necessary without heavy pressure.
Next, place the knife blade vertically into groove the Medium Brown wheel in the center, and move the blade back and forth with slight pressure 7 or 8 times, or as necessary. Lastly, place the knife blade vertically into the Fine Yellow Wheel and move the blade back and forth with with slight pressure 7 or 8 times. It is very important not to apply too much pressure when passing the knife through the sharpener, as doing so may cause damage to the wheels.
When sharpening is complete please hand-wash knife blade in hot water and carefully dry with a dry towel or cloth before use.
