Description

The Wusthof Classic Ikon Hollow Edge Wunder Knife is ideal for just about anything in the kitchen. This multi-functional knife can be used for chopping, dicing, cutting, slicing and carving. The hollow edges allow for an effortless cut through foods without worrying about it sticking to the blade.

Wusthof Classic Ikon full-tang knives are precision forged from a single piece of exclusive Wusthof high-carbon stainless steel. The handle design is made of a highly durable synthetic material known as Polyoxymethylene (POM), which features a tighter molecular structure to resist fading and discoloration. The half bolster allows for the knife to be honed and sharpened the entire length of the blade and the heel bolster provides added balance. Each Wusthof Classic Ikon knife features a computer controlled cutting edge to ensure the final edge of the blade is precise and uniform from the tip to the heel. The Wusthof PEtec angle and tapered cutting edge reduces drag when slicing foods, allowing for seamless and effortless cutting. Each knife blade is completely buffed and polished by hand. Wusthof Classic Ikon knives are made in Solingen, Germany with a lifetime warranty.

    The Santoku evolved - Santoku Kaiju even?

    An absolutely gorgeous knife. I got this with the idea that it’s like a Santoku, but with a bit more of a point when required. For comparison, I photographed it with my 6.7 in Ikon Blackwood Santoku that I’ve had for 12 years.

    The feel of the knife takes a little bit of getting used to given the taper toward the front, but if you’re experienced, then that shouldn’t be too much of a learning curve.

    I feel like this combines the strength of the Santoku with those of a smaller chef’s knife. Thus, it has a bit more versatility.

    I was a little disappointed on some QC aspects: this is from the Ikon, but right out of the box there seemed to be light scratches on the blade despite the fact that it’s a new knife. Also a little disappointed the handle isn’t as nice and it didn’t come in a fancy tin like the Santoku, but times have changed on the latter.

    Otherwise, this is the usual solid build and premium that you would expect from Wüsthof. Given I’m vegetarian, my own uses are not as broad, but I do cook for others.

    It’s great thus far, and I’m looking forward to trying this on meat and fish dishes for the people I love!

    Good addition to Chef’s knife in set.

    I really like this knife for slicing & chopping smooth vegetables such as Tomatoes, zucchini onions, etc. Veggies fall off blad more readily than on the Chef’s knife. Also seems to have slightly less curve than standard Chef’s knife which I like fore smaller chopping like celery. Only downside is that blade is narrower so less effective in scooping up veggies from cutting board. Honestly, I probably need to use a spatula or bench scraper for that anyway..; my new Wusthof knives are so sharp I wonder if they are shaving off part of the plastic on my cutting board!

    MUCH better than what I was expecting!

    The majority of my knives are Japanese brands and styles but was very intrigued with this style. The sale price was great so I thought I’d give it a try and I LOVE it. The blade is thinner and sharper than I was expecting and the overall weight is much lighter than other German knives I have. I would highly recommend this knife!
