Description

The Yaxell Super Gou Santoku Knife works exceptionally well on vegetables, proteins, and fruit for slicing, dicing, and chopping. The slight belly curve enables the cook to rock the blade slightly. Yaxell Super Gou blades feature an extremely sharp cutting edge. Constructed of Japanese SG2 Micro Carbide powder stainless steel, which is enveloped by 160 layers combined with alternating soft and hard stainless steel. The corrosion resistant powdered carbon steel has an unprecedented 63 Rockwell hardness. Powdered steel is used because it ensures a high degree of purity and strength. The resulting blade is extremely hard, ensuring an exceptionally sharp cutting edge. The surface impresses a fascinating Damascus design pattern. The handle is made of red and black canvas micarta with three stainless steel rivets. The canvas material is dyed red and black and brilliantly finished to last for decades. The engraved end-cap of the handle is made of 18/10 stainless steel, which provides outstanding stability and balance.

    Extreme sharpness

    This Super Gou is really amazing to just look at, but such a great knife, so far; it's only a couple of weeks in use. Sharp, nice weight, well balanced and appearing to have been constructed with superb materials and technique. It's out of the box extreme sharpness surpasses my best freshly sharpened Pro S Henckels (I use WorkSharp E5 with multiple belts). The weight of the knife cuts through 11" of paper with minimal applied pressure; practically just the weight of the knife. Impressive tool.

    Almost perfect

    One of the most beautiful knives I’ve seen. Unfortunately the rivets in the handle were not properly polished and they were digging into my palm right out of the box. I wasn’t going to use it just to be thinking how uncomfortable it was every time I hold it. So, I returned it it. The process was super easy and smooth. I bought an Enso SG2 instead.
