Description

The Enso SG2 Paring Knife is ideal for peeling, coring, trimming, decorating, and other detail work. Also can be used for chopping small foods, such as garlic cloves or ginger. Enso SG2 features an extremely sharp cutting edge. Constructed of Japanese SG2 Micro Carbide powder stainless steel, which is enveloped by 101 layers combined with alternating soft and hard stainless steel. The corrosion resistant powdered carbon steel has an unprecedented 63 Rockwell hardness. Powdered steel is used because it ensures a high degree of purity and strength. The resulting blade is extremely hard, ensuring an exceptionally sharp cutting edge. The surface impresses a fascinating Damascus design pattern. The handle is made of black canvas micarta with a stainless steel bolster, red spacers and Samurai Crest. The engraved end-cap of the handle is made of 18/10 stainless steel, which provides outstanding stability and balance. Handcrafted in Seki City, Japan with a lifetime warranty.

    Well balanced and SHARP !

    I am a big fan od Enso SG2’’s (having 4 other knives in this collection) going into this purchase. I wasn’t sure about the length pre-purchase because i had somehow convinced myself that I needed a 3.5 inch paring knife and not a 4 inch. Due to the superb craftsmanship of this knife and the handle geometry, I am very pleased with the extra length decision because you can pinch grip this blade for fine herb chopping and also go hadle only for dicing the tougher stuff like carrots with no need to grab a larger knife. Love this little knife.

    This whole set

    I've been collecting and experimenting/hands on with the sg2 series, it's amazing, today I pulled out my enzo bag and prepped up some veggies to pickle for a Bahn mi special tomorrow. I've never sliced a carrot so fluid like, almost like a mandolin with ease in my 25years of cooking. Knife does all the work, barely any muscle work, just direction.
