The Shun Narukami Blue #2 Carbon Steel Paring Knife is an indispensable kitchen prep knife. Full-tang construction, and micarta handles, will make Shun Narukami your go-to for many culinary creations. Shun Narukami is a simple carbon steel alloy that provides excellent edge retention and toughness, and can be re-sharpened easily. Yet, like all carbon steels, Shun Narukami requires additional care. Cleaning and drying immediately is key. Over time, the edge will darken, developing a patina which, when formed, will also help protect the edge.     Worth every penny. Easily gets razor sharp.

    This blue steel 2 pairing knife has exceeded my expectations by miles. Gets razor sharp easily and stays sharp longer than any other Shun I own. And I’ve got them all. Must wash and dry immediately after use. Just an excellent investment.

    Paring Knife of my dreams incorrectly described at 3.5"

    As someone who’s obsessed with kitchen knives, I’ve cycled through more paring knives than I care to admit. My Cangshan German Steel 3.5" paring knife from a Costco block set is the right size, but never quite earned its keep: the bolster felt clunky, and the steel and edge didn’t hold up to my expectations. My other paring and petty knives are bigger than I prefer at 4 inches and more.

    I was ready to upgrade and had my eye on two K Sabatier paring knife options: the 4" Au Carbone and the 2.75" Olivewood. Wanted the carbon but didn't want the 4-inch. Both are attractively priced and promising that old-world French charm, so I made the decision to get both. But just before placing the order, I stumbled across the Shun Narukami Blue #2 Carbon Steel 3.5" (listed as such, anyway) on sale. Stainless cladding, carbon core, naked carbon edge, the size that i wanted, and a sleek Japanese profile? I thought: this is the one.

    Ordered yesterday, arrived today. Lightning-fast shipping. The knife is stunning, razor sharp, beautifully balanced, and clearly crafted with intention. One surprise: it’s actually a 4" blade, not 3.5" as advertised. Normally, that half inch would be a dealbreaker for me. But this knife earns its place. It’s elegant, precise, and feels like an extension of the hand.

    In the end, I passed on the Sabatiers. No guilt, but I am second-guessing the decision. This Narukami is a wonderful piece. Form meets function, tradition meets performance. I'm just a bit salty that…
