This rustic Chinese cleaver is hand-forged using Japanese shirogami #2 carbon steel that is clad with stainless steel for easier overall maintenance. It is made in China and features a rough kurouchi finish and a polished edge with a traditional barrel-style maple handle and stainless steel ferrule. The core steel is hardened to around 60 HRC to maintain its toughness, but this knife is definitely ground thin so it is a great slicer and not designed to chop through any hard bones or frozen foods. Must keep blade clean and dry to prevent rust from forming on the carbon steel edge. Wash by hand only.

I have made it a point to not buy knives made in China for various reasons, not to say there aren't some excellent blades that are manufactured there, but there was one exception.... I wanted a legit Chinese cleaver. I saw this one on sale, hand forged, and uses japanese white steel #2 for the blade core!?!?!?! Perfect! The handle is well made but completely unfinished, so be aware of that. I am sanding it a little more and giving it an all natural tung oil finish. I plan to round the spine a little and maybe a couple other small things but this is a very cool veggie cleaver and I really enjoy doing those finishing touches. It isn't a meat cleaver, so be aware of the difference, and know the handle is bare wood and should be sealed or finished in some way. It feels balanced and fairly light for its size, arrived sharp, and cuts well from a quick test. Waiting till the handle is finished for regular use.

Purchased for my wife who has a Kramer 8” Chef’s Knife. The weight and cutting power attracted her to this purchase. A great vegetable Chinese Cleaver. Highly recommend it.

Filled the tang cavity with blackened epoxy (water won’t get inside), lacquered the handle, and softened the burrs on the top and front of the blade. After the water stones and strop, this knife is awesome! Now my favorite!
