The Enso Hizashi Chinese Chef's Knife is a cutlery staple in Asian kitchens. Although the shape resembles a western cleaver, this blade is thinner and lighter. It is designed for chopping, slicing and dicing. The broad surface also comes in handy for scooping and transferring chopped ingredients.     Cleaver Believer

    Oh, how I love 😍this knife and blade. I have been using my Wusthof Grand Cuisine knives which I also love and have had for 40 years...still in great condition btw. However, I have recently started to dive into the Japanese knife world, and this Enso Hizashi Cleaver is my first purchase. While the knife and blade surface is large it feels so nimble and balanced in my hand with a pinch grip. I cannot find the right words to describe how much I love the geometry of this blade. It's the most striking difference between my German knives.

    While I may never slam this knife into an avocado pit like I do my Wusthof, the ability to slice ever so thinly large vegetables, like lettuce or cabbage, or even a small pepper is remarkable. For most chef's I'm sure function and form trumps looks, but this knife is just so beautiful to look at, with the Damascus layers near the cutting edge to the Tsuchime treatment along the mid-blade and spine.
