Features

  • Constructed of Japanese SG2 powder stainless steel for a fine carbide structure that takes a very fine edge with superior edge retention; 63 Rockwell Hardness
  • 3 layer blade with SG2 core and hammered ("tsuchime") texture with a black ("kurouchi") finish; the blade is then ground to a matte finish with a highly polished edge for a beautiful and long lasting appearance
  • Thin blade is hand ground and honed to a razor sharp 12 degree double bevel blade angle
  • Traditional Japanese octagonal two-tone pakkawood handle with white ring is ergonomically shaped for a secure grip and is permanently and seamlessly installed to the blade
  • Extra tall gyuto profile (50mm blade height) with a flatter base facilitates easy chopping and slicing using a vertical/push cut motion but the slightly sloped downward tip also allows this knife to be used in a rocking motion
  • Handcrafted in Seki, Japan with a lifetime warranty

Description

Our exclusive Enso Hachi series features a superbly finished traditional octagonal handle made of two-tone colored pakkawood with a black pakkawood ferrule. The blades are crafted of SG2 powder stainless steel for the ultimate in edge retention and sharpenability. The blades feature a rustic and beautiful black ("kurouchi") hammered ("tsuchime") finish. Then, when the edge is ground down to an acute 12 degree double bevel angle, the matte finish blade road is met to a highly polished edge, giving this knife a very impressive appearance that combines a rustic feel with refined cutting performance. These blades are thin and well balanced for a lightweight and smooth cutting feel. As always, and the Enso Hachi series is no exception, these knives are handcrafted in Japan by expert artisans. As with all high quality kitchen knives, these knives should be washed and dried by hand. All Enso knives come with a lifetime warranty against manufacturer defects. Made in Seki, Japan.

    Love this

The price-to-quality ratio of this knife makes no sense. It's especially good for someone who wants something that will last.

    Attractive and practical knife

This knife isn't amazing beautiful, but old fashion design, modern craft, snowy SG2 blade let you know it is very sharp knife, its balance point is about 1 inch from handle, suitable to get near to the blade when holding this knife. great knife!

    Great recommendation

Chef Brandon from the channel recommended this knife to me. And against my reservations I ordered it, I prefer longer knives. And I couldn’t be happier! It cuts so well and is so sharp! Very good geometry and thin behind the edge, but this knife is a work horse too. Love this shorter blade! Thanks again Chef Brandon!
