Hatsukokoro Ryuhyo SG2 Kurozome Damascus 7" Bunka

Using this knife on the daily for large scale institutional size cutting and slicing. I can fully say this knife is PHENOMENAL. I run it through an 8-10k whetstone every week to keep it optimal. I’m finely slicing Persian cucumbers in bulk, in various sizes, the nimble weight and consistency in blade retention is by far my favorite. I’m not terribly worried about others using it around the kitchen. I’m more worried that other cooks haven’t used laser beams like this knife!? It’s by far my favorite and most used knife for almost anything just because it’s so nimble and fun to use. 10/10 great work horse knife, just take good care of it. And it’ll deliver ten fold!

Immediately, I liked the light weight, nimbleness and accuracy of the blade and the octogonal handle. The pointed tip is a nice feature over the santoku or having to use my utility/petty knife. I use this almost exclusively for vegetable prep. Shortly after using it I gave away two knives - my 5" and 7" Santoku from another manufacturer - because this is the knife I reached for intead.

Got this knife recently and you’d be shocked at not only how sharp, but light this knife is. Look into the proper knife care for bunkas and sg2 steel so you can take care of this beauty accordingly (:

First of all, insanely fast order processing and delivery as usual for these guys. The knife is a blast. Super thin and super sharp out the box. Tomatoes and potatoes are a joy with this knife.
