Description

The Miyabi Mizu SG2 Slicing Knife is perfect for carving beef roasts, ham, turkey and other cooked meats. Miyabi Mizu SG2 starts off with the Tsuchime method, consisting of 3-layers of SG2 steel with a hammered finish to allow food from sticking to the blade. Next, the Honbazuke process involves the Katana edge being sharpened with an ancient 3-step process, which sharpens the blade twice on whetstones, followed by mirror polishing on a leather wheel. This process was used over 1000 years ago for samurai swords to create the ultimate sharpness. The Criodur process gives the steel hardness for blade retention, flexibility, and highly corrosion resistant. To deliver the outstanding performance, the blade is hand-honed at the traditional Japanese blade angle of 9 to 12° on each side, which results in a scalpel-like sharpness. This outstanding performing blade is complimented by a stunning durable D-shape Micarta handle, featuring a mosaic pin, red spacers, and a metal end-cap with logo that adds balance. Handcrafted in Seki, Japan with a lifetime warranty.

    Best slicer I’ve used

    Cuts through everything I’ve put it though like butter- this is an amazing knife, holds an edge, makes clean cuts in sashimi as easily as cutting brisket.

    Brisket Beware

    I recently completely updated my kitchen knives to mostly Miyabi Mizu knives along with a Shun Paring and Bread knife. The handles are just barely smaller than I think is ideal for my average size hands but are well profiled and the material they are made of actually is slightly more grippy when wet and is one of my favorite handle materials for that reason. I also purchased an 8 inch chef, 7 inch Santoku and 5.25 Prep knife. All the knives showed up extremely sharp and are a very nice improvement over my previous set. So far the family favorite is the 5.25 prep knife day to day but when you slow smoke a brisket or prime roast the slicing knife rocks!

    Awesome

    This was my first experience with Japanese knives. And the quality craftsmanship and sharpness are pretty amazing. I have uses knife to cut a rib roast amongst other piece of meat Annie performed excellent. Definitely a worthwhile kitchen investment
