Description

The Global Heavyweight Butchers Knife is a specially designed drop-forged knife for cutting big blocks of meat favored by professional chefs. Also, use for breaking down ribs or loins, or for even smaller cuts like tenderloins or roasts. Global knives contain two innovative features, their edge and the way they are balanced. The most important detail of any knife is its edge, and the Global edge is truly its signature. Global knives are sharpened or ground steeply to a point, and to an acute angle while resisting rust, stains and corrosion. The straight edge results in a dramatically sharper knife which stays sharper longer. The edge on a Global knife is so large and prominent that it is easily seen with the naked eye and extends a quarter of an inch or more up from the tip of the knife.

From its modest inception, Global has developed into one of the most successful brands of professional kitchen knives in the world. Still crafted by hand in Yoshikin's factory in Niigata, Japan, Global knives are manufactured to extremely high and exacting standards.     Great Knife

    I purchased 2 of these knives in preparation for butchering a 400 lb hog on 7/8/17. Knives performed flawlessly during the butchering process, they are well balanced and stayed throughout entire operation. Only issue was knives needed to be longer, but that is not a slight against purchase as I knew how long they were when I purchased them.

    It's a beauty.

    I have several Global knives and do a lot of cooking and bbq'ing so I selected this knife to use for trimming briskets, pork butts, cutting suckling pigs, turkeys and chickens. It is a beautiful knife, but a bit small for large jobs.
