Description

The Zwilling Pro Flexible Boning Knife is an extremely hard, yet flexible knife that enables you to easily, and neatly, separate meat from bone. Zwilling Pro is designed by architect and designer Matteo Thun, offering beauty and function with a classic design. The wedge-shaped blade and half bolster allows you to cut along the entire length of the blade. The unique curved bolster supports your thumb for extra grip, comfort, control and safety. This entire collection features precision forged knives made from a single piece of Zwilling exclusive high carbon stainless steel. As a result, the knives have improved quality consistency, lasting sharpness, and perfect geometry. In addition, the steel blade goes through a special ice-hardening process called Friodur. This process changes the molecular structure of the steel improving the cutting properties providing a remarkably sharp blade and ensures a long lasting cutting edge. Each knife is hand sharpened, polished and laser controlled to assure the cutting edge is accurate along the full length of the blade. The blade is enhanced with a traditional 3-riveted resin handle. Made in Germany with a lifetime warranty.

    Excellent Boning and Trimming Knife

    I've had this knife only for about four days now but I can sum up my reaction to using this knife in one word - WOW!

    I replaced a 6 inch Victorinox knife and it was good but over the last few years it required more and more sharpening. It too was sharp right out of the box and for under $20 some 6 years ago, I got my money's worth.

    But this Zwilling J.A. Henckels Pro 5.5 inch boning knife is razor sharp and flexible. I just trimmed some London Broil before cutting it up for jerky pieces and it worked fantastic at getting the silver skin off as well as separating the thick fat from the meat without tearing it up.

    The shipping was free and it arrived in 2 days. I was very impressed with the packaging and the delivery time. Yes, it is a little pricey but I believe it's worth it as I'm pretty sure it will save more meat from the scrap pile.
