The Yaxell Taishi Curved Boning Knife is perfect for trimming the silver skin from a tenderloin or roast or even making your own cutlets. The narrow blade reduces the drag as you cut against the meat, so cutting is fast and easy. When it comes to filleting fish, it's just right to glide through the body of the fish, quickly removing bones and skin.

Yaxell Taishi's core material is VG10 super stainless steel, which is clad, covered by high quality stainless steel from both sides. The Katana sword wave line gives an impressive appearance on the blade. The handle is made of black beech pakkawood which provides outstanding stability and balance. The attractive bolster and embossed end-cap of the handle is made of brushed stainless steel to ensure great balance for the entire knife. Yaxell Taishi is handcrafted exclusively in Seki City, Japan with a lifetime warranty.

    Pretty good quality

    Very sharp out if the box. The finish is very nice aside from the cladding being uneven on one side towards the tip. Edge bevel is a little uneven but isnt too bad. Handle is decent.
