Description

The Shun Premier Grey Nakiri Knife is sure to attract your attention with its interesting blade shape. Nakiri is Japanese for "vegetable knife" and Shun's beautiful Premier Grey Nakiri is the ideal kitchen knife for slicing and dicing most every fruit and vegetable in your kitchen, from apples to zucchini. The nakiri blade shape is extremely practical too, with its blunt tip, it is safer to use in the kitchen. Due to its straight blade, edge, and spine, the nakiri is not rocked like a chef's knife. Instead, use a push cut by moving the knife down and forward while keeping the edge parallel to the cutting surface. If you prepare vegetables for salad or stir-fry, you will simply love using the Shun Premier Grey Nakiri.

The Shun Premier Grey line calls to mind as the hand-forged knives of ancient Japan. While each knife still takes at least 100 handcrafted steps to complete, the materials Shun uses are among the most advanced in the industry. Each blade has a cutting core of Shun's proprietary VG-MAX "super steel" to take and hold a precision edge. The layered Damascus cladding supports the core and provides additional stain resistance. Near the edge of the blade where the steels meet, an undulating line is formed, similar to samurai swords using a traditional clay-baking technique. The hammered tsuchime finish acts like a series of hollow-ground cavities to reduce drag. The grey PakkaWood handles nestle comfortably in the hand, while the embossed end cap adds balance and beauty. Handcrafted in Seki, Japan with a limited lifetime warranty.

    Shun 5.5 inch Nakiri knife

    I added this knife to our collection as we needed a well balanced vegetable slicer using a push cut technique. It does a wonderful job of slicing celery, peppers, onions and fresh Tuna.

    I have a number of Shun knives and appreciate their workmanship and warranty .

    Precision, beauty, and Veggie Power

    This knife is razor-sharp—possibly even sharper than my Master Utility—and it glides through produce like onions, zucchini, carrots, scallions, and apples with zero resistance. The 5.5” blade feels nimble and controlled, especially around the sink where I prep meals for my senior Labrador. Bonus: zucchini wedges cling gently to the blade and release cleanly, making transfers to the bowl a breeze.

    While it excels at fruits and vegetables, the Nakiri isn’t ideal for every task. I found myself missing a pointed tip for garlic cloves, strawberries, and vertical cuts on onions. It also lacks the curved belly needed for slicing meats—tasks where a knife like the Gokujo really shines. But that’s the tradeoff with specialized blades: they do their specific jobs exceptionally well, and are only so-so for other tasks.

    Beautiful, comfortable, and genuinely fun to use, the Nakiri has earned a permanent spot in my rotation… even if that means my Master Utility gets a little less attention these days. If Shun ever releases a Bunka, it might be the perfect middle ground. Until then, an Enso Bunka might just scratch that itch.
