Description

Traditionally used for roasted barbeque meats, the CCK Kau Kong Chopper is popularly used in Cantonese cooking. It is heavier than the typical CCK vegetable slicers and offers a robust spine that is almost 5mm thick. It can handle going through chicken bones and smaller fish bones and excels at chopping up cooked meats. It does feature a thin and sharp edge, so it shouldn't be used on any large beef bones and the like. The blade features a rustic kurouchi finish and is made of carbon steel, so care must be taken to prevent rusting.

CCK cleavers come with a thin coating of food-safe lacquer that will wear away with use. After that, the knife will change color and darken in appearance while forming a protective patina. Once a patina is formed, this will protect the blade and lessen the chance for rusting. Visual imperfections are quite common on these knives and not considered a defect, but the performance of a CCK is never compromised.

Chan Chi Kee (known better as CCK) has been forging Chinese style chef's knives ("cleavers") for over 100 years in Hong Kong. Care: Wash and dry by hand (not dishwasher safe). This CCK cleaver has a full carbon steel blade. It will rust if not cleaned and dried promptly after use. Any rust that forms should be removed. Over time, if cared for properly, this knife will develop a beautiful and protective patina.
