Description

Our Exclusive Shun Hiro Collection combines striking beauty with peerless performance. In Japanese, the name Hiro is known as "abundant," "generous," and "prosperous." The Hiro cutting core is made of SG2 micro-carbide steel. This ultra-fine-grained steel is incredibly hard and dense, enabling Shun to make thinner blades that can be sharpened to a razor-like 16° cutting angle. At the same time, SG2 offers unmatched edge retention, so it's superb for kitchen use. Due to this combination of performance and durability, SG2 is considered by many to be the world's best blade steel for use in kitchen knives.

In 150 handcrafted steps, every curve has been meticulously smoothed and rounded, from spine to heel, while each cutting edge has been precisely sharpened to make every cutting task a pleasure. True to its Eastern heritage, the Shun Hiro's handle follows straight off the blade for a grip Asian-style knife enthusiasts prefer. Made of premium charcoal-colored PakkaWood with deep crimson striations, the handle is also adorned with an inlaid brass-and-steel Samurai family crest mosaic and a mirror-polished nickel silver bolster and end cap. Handcrafted in Seki, Japan.

    Extraordinary

    I have a decent collection of high end Wüsthof knives, mostly purchased from Cutlery and More, over decades. But with the arrival of tomato season I found Wüsthof’s serrated utility knife somewhat lacking. What had been a minor annoyance became a serious problem, as this year I discovered the joys of a tomato sandwich, and hence supersized tomatoes that needed slicing. (The blade on Wüstof’s bread knife is too thick for this task.) The Wüstof’s serrated utility blade is too thin to manage a straight slice on an oversized tomato, instead it flexes, producing uneven angular slices.

    Anyhow, the problem cried out for a novel approach, so I thought I’d try the Shun serrated utility knife.

    It’s been almost a religious experience. The Shun knife slices straight and true with ease. Point, slice, Bob’s your uncle!

    It’s only drawback, which I can live with, is that it isn’t dishwasher safe.

    I don’t really have room in my knife drawer but I’m so impressed that I’ll probably start to buy a small assortment of Shun knives.

    versatile helper

    While not a kitchen must-have, it comes very handy for tougher-skinned veggies and fruits - some tomatoes, mangoes, etc. - but can also serve as a perfect hard-rind cheese knife.

    Excellent utility knife

    the dual serration is perfect for tough-skinned fruits and vegetables - watermelon, cantaloupe, gourds, etc.

    Much more efficient and cleaner cut than the go-to bread knife.

    Bought as a replacement for a Zwilling

    Picked this one up for my wife. She does "Veggie" prep for our salads and had been using a serrated Zwilling. Nothing wrong with that knife (as it is a part of a full set I bought years ago). I just started buying some Japanese knives and thought she would enjoy using a lighter sharper knife. She is in love with it. She likens it to a piece of fine jewelry in fit and finish. Say's it's the best knife she's ever used.
