Enso HD 5.5" Prep Knife

This like a Ko-bunka. Fun knife for small quick prep. Like making a salad, cutting the carrots, the cucumbers tomatoes. Prepping some garlic and shallots or small onions.

Like I've noted in other reviews of ENSO HD I would consider this a transition knife. Japanese style or shape but western handle, It's not full on Japanese geometry a little more robust, but that means it's also more forgiving. Sg2 and harder steels can be very chippy if mishandled even slightly.

This knife exceeded my expectations. It’s well balanced and razor sharp. I would recommend this knife for anyone looking for a quality prep knife at a reasonable cost.
