Description

Our exclusive Enso Hachi series features a superbly finished traditional octagonal handle made of two-tone colored pakkawood with a black pakkawood ferrule. The blade of this Enso Hachi Bunka Knife is crafted of SG2 powder stainless steel for the ultimate in edge retention and sharpenability. The blades feature a black "kurouchi" coating that is applied to the hammered ("tsuchime") blade. Then, when the edge is ground down to an acute 12 degree double bevel angle, the matte finish blade road is met to a highly polished edge, giving this knife a very impressive appearance that combines a rustic feel with refined cutting performance. These blades are thin and well balanced for a lightweight and smooth cutting feel. As always, and the Enso Hachi series is no exception, these knives are handcrafted in Japan by expert artisans. As with all high quality kitchen knives, these knives should be washed and dried by hand. All Enso knives come with a lifetime warranty against manufacturer defects. Made in Seki, Japan.

    Solid performer

    Handle is is a little heavier than I expected but still balances well. Edge geometry is excellent. Few strokes on my strop and it cuts like a laser. The spine and chill are rounded. Overall fit and finish is excellent. The blade length is very practical for everyday use. SG2 edge hardened to 65 on Rockwell scale so it keeps its edge for longer. Love it.

    Great small knife for single serving meals

    Purchased this little Ko-Bunka for small work on vegetables for my weekly favorite fried rice meals. The Super Gold 2 (SG2) strops quickly on thin hard leather with diamond compound. Really appreciate the stain resistant chemistry of the blade. Wa handle is very comfortable and thin spine with nice edge profile glides through carrots. My Nakari knives will be resting for a long while.

    Great Sized Knife

    I had been looking for a knife this size and shape for a while then eventually gave up. This ko-bunka showed up while I was looking for something else and I immediately purchased it. Often this knife is big enough for everything I’m making for dinner. The only ding I’ll give the appearance of this knife is the kurouchi finish is actually paint and not from the blade production so it looks a little cheap next to a hand forged knife. However the handle is nice enough to offset the look of the spine. Keep in mind this is a very hard steel that will sharpen easily and stay sharp but will chip if mistreated. If you are looking for a midsize knife with a Wa handle, you won’t beat this price for high quality steel.

    Exactly What I Needed

    I wanted a knife that was in-between my larger santoku, and smaller paring knife. This ko-bunka is perfect. I really liked the specs on this one, and when I saw the sale price, I had to order it. Super fast shipping, and good packaging. The octagonal handle fits my hand perfectly. The blade profile is very thin, and it was razor sharp right out of the box. SG2 core will stay sharp for a long time. I really like the finish on the blade. I hand wash and dry it after each use. I mainly use this knife for prepping salads. It is really great for slicing tomatoes. I love Japanese kitchen knives, and I am happy to add this one to my collection. I built a custom wooden stand for it. I know it will serve me well for many years.
