Chef's Choice 3 Stage Black Model 15XV Electric Knife Sharpener

We sharpen two sets of knives as soon as we received the sharpener. The knives are so sharp my son cut his finger twice but didn't even feel it either time. The machine has already paid for itself compared to what a professional knife sharpener would have charged for the two sets. We love it!

I'm researching different types of sharpening systems, so of course I had to try this one. America's Test Kitchen recommended it. I sharpened a knife and put it on my Edge-on-Up BESS tester. Scores in the 230s. I can sharpen my knife to 190 on my Kuromaku stones, but 230 is better than most other sharpeners I've tried, and it's plenty sharp for my kitchen. if you watch Outdoors55 on Youtube, he claims the resin wheel in Stage 3 gets packed with swarf far too easily, limiting the lifesapan of the sharpener. I can't speak to that, but i do know that this is a good knife sharpener that will put a keen edge on a chef's knife.

Diamond wheels & a strope! Composite & stone wheeld misshape as they wear and start to do more damage than good to your knives. Diamond wheels may wear & take longer to work, but they will not ruin your knives. The stroping gets a near hand polished edge. Not perfect, but extremely close without the need for expense or time consuming professional sharpening. I perfect motorized sharpener.

This model is so easy to use and it works absolutely amazing on all my knives. It can do serrated as well and I struggle with those but for standard sharpening I have not sound a better and more sharp producing device.
