Description

The Tojiro SG2 Utility Knife is perfect for cutting small sized sandwiches, fruits, vegetables and more. The Tojiro SG2 series features a full-tang, 3-layer blade constructed of very hard SG2 powdered steel core sandwiched between two layers of softer stainless steel. The Rockwell Hardness of 64 is hard enough to hold an edge, but easier to sharpen than super hard steel. The triple riveted traditional style Micarta handle with bolster contains heft and balance and the closed bolster collar allows for full and complete sharpening of the blade. The thin blades, feature a razor sharp edge that is hand-honed and sharpened by skilled craftsmen in Japan.

    little laser

    Sharp right out of box. Great knife when you want to do some delicate knife work but want the little longer than pair knife. Being so thin I would not push it to cut thicker stuff but so far no chipping like I have seen with other SG2 knives.

    Tojiro translates to Great Value in the kitchen

    I love knives with SG2 blades and this is no different. What is different is that you can get a 5" utility knife made with SG2 for about $100. So far it has proven to be wonderfully utilitarian and always very sharp when I select it. I very occasionally give it a slight hone or strop to maintain the edge not it's not really required. I want it always operating at peak performance. Tojiro is not the fanciest of knives, but they make quality at a great value.
