Description

The Tojiro SG2 Chef's Knife is a kitchen essential, designed to peel, trim, slice, dice, chop, and mince vegetables, fish, meat and more. The Tojiro SG2 series features a full-tang, 3-layer blade constructed of very hard SG2 powdered steel core sandwiched between two layers of softer stainless steel. The Rockwell Hardness of 64 is hard enough to hold an edge, but easier to sharpen than super hard steel. The triple riveted traditional style Micarta handle with bolster contains heft and balance and the closed bolster collar allows for full and complete sharpening of the blade. The thin blades, feature a razor sharp edge that is hand-honed and sharpened by skilled craftsmen in Japan.

    Wonderful chef's knife

    I have only had this for a few weeks, but it is a comfortable weight- and wickedly sharp. If it holds up like my other Tojiro knives it will get daily use.

    The knife I've been searching for all this time!

    Love this 21 cm gyuto for its thin blade that makes chopping vegetables at home fun and easier than ever. It's my first powdered steel knife, and I expect it to stay sharp for a very long time. My other knives are VG10 Tojiro DP Damascus nakiri, santoku and 24 cm gyuto.

    Good Value SG2 Knife

    I tried another brand SG2 chef 8” knife made by Tojiro, which is not Damascus pattern, turning out pretty good. The knife is about $70-80 cheaper. I am happy buying the knife

    Very impressive

    I'm a relative novice with regard to kitchen knives but I do have some good knives (Wusthof Classic of various types). This was my first Japanese knife and fulfills all the major expectations: very sharp (read: VERY SHARP), a bit liable to stain or rust if left with water on it (I have some barely visible spots on mine).

    In some ways it is not typical Japanese high end though: the Western handle keeps the balance toward the handle, not toward the blade as with some knives with traditional Japanese handles. It is not very light.

    It is beautiful--it has understated graceful lines that I appreciate more and more. I love it.
