Description

The Shun Classic Flexible Fillet Knife conforms to the ribs of fish, removing meat from bones quickly and easily. Removing skin from meat is easier, too. It works well for boning and trimming out poultry and other meat as well. The whole idea is more food with less waste and of course, you would make stock from the bones and leftovers. The AUS8A high-carbon stainless steel blade offers strength, hardness, and wear resistance. The result is a knife that's sharp, durable, and corrosion resistant, as well as beautiful to hold. Handcrafted in Seki, Japan with a limited lifetime warranty.

    The Flexibility enhances Function

    I have a full complement of Shun Classic, including the fillet/boning. I like this blade more than that due to the flexibility, which allows me to easily remove skin from fish

    Amazing knife

    I chose this look for my fillet knife than the traditional german western style skinny fillet knife because in my work we skin and dice some fish for ceviche and I think this kind of fillet knife that has almost the same built as a chefs knife would be better for slicing and dicing than the western knife. Its just those little things that can help you work more efficiently at work.
