Description

The Miyabi Kaizen Extra Wide Rocking Chef's Knife is ideal for chopping, dicing, mincing, and slicing meats and vegetables. With its extra wide blade, it aids in food preparation as well as food transfer from cutting board to saucepan or fry pan. The Miyabi Kaizen collection combines the best hardening technology with the artistry of traditional Japanese craftsmanship. The resilient core of VG10 super steel (5000DP) is protected by a stunning 64-layer flower Damascus pattern. The Cryodur blades feature exceptional sharpness and durability thanks to their innovative, ice-hardening treatment. Artisans hand-hone the blades with the historic Honbazuke method. This attention to detail translates into precision cutting for Miyabi Kaizen users. The blade is balanced by a refined D-shaped handle made of black linen micarta. With a wood-like texture, the comfortable handle won't slip from your hand and acts as a moisture repellent. Handcrafted in Seki, Japan.

    All I can say is...wow.

Well I've put it through the ringer and this thing is amazing. It looks even better than the pictures, my best looking knife and best steel knife I own. It's quite heavy in the hand which is nice for rocking, to let the knife do the work. It came very very sharp, I didn't sharpen it for several uses but once I put it on some shaptons it was very easy to sharpen and I got it much sharper than it came.

    Pros:

    Crafted appearance

    Weight

Sharpness (7/10 out of the box)

Effective and not huge in the hand

No cons I can think of! Just be aware this is your rocking knife, and should not be used for initial cuts into large tasks like onions. The shape simply won't work well.
