Description

The Enso SG2 Prep Knife is designed for peeling and chopping vegetables and fruit, slicing meats, cheeses and more. Enso SG2 features an extremely sharp cutting edge. Constructed of Japanese SG2 Micro Carbide powder stainless steel, which is enveloped by 101 layers combined with alternating soft and hard stainless steel. The corrosion resistant powdered carbon steel has an unprecedented 63 Rockwell hardness. Powdered steel is used because it ensures a high degree of purity and strength. The resulting blade is extremely hard, ensuring an exceptionally sharp cutting edge. The surface impresses a fascinating Damascus design pattern. The handle is made of black canvas micarta with a stainless steel bolster, red spacers and Samurai Crest. The engraved end-cap of the handle is made of 18/10 stainless steel, which provides outstanding stability and balance. Handcrafted in Seki City, Japan with a lifetime warranty.

    Great prep knife

    I own the HD and SG2 versions of Enso’s prep, Bunka and Kiritsuke knives. They are all great knives that get the job done. I have noticed the SG2 cuts slightly better than the HD series. I’m not sure if there’s a difference in blade geometry that changes the feel. However, the difference in performance isn’t huge. You really have to use them side by side to tell the difference. These are the knifes I use a lot when I don’t want to care for my carbon steel blades.

    Wicked sharp & just the right size

    This knife replaced a 5.5” Santoku which had a thicker blade, wider bevels, and softer steel. It excels at push cutting small fruits, vegetables, and light prep work. The blade is thin, the heat treat of the SG2 steel is really good, and the handle works well for me & my wife. I highly recommend this knife!

    Jaw droppingly functional

    I read the detailed reviews of others before purchasing. I had never seen a Bunka knife before. I am not sure I know yet how to effectively utilize its tip. However, it is as razor sharp as others have said. The handle fits my small hand very well. I will use this for virtually all food prep until I get the same one with a longer blade and then will use the two of them for virtually all food prep.
