Description

The Global Bread Knife is great for slicing foods with thick crusts or rinds like artisan breads and melons or gourds. It also cuts through soft bread without crushing it. Global knives contain two innovative features, their edge and the way they are balanced. The most important detail of any knife is its edge, and the Global edge is truly its signature. Global knives are sharpened or ground steeply to a point, and to an acute angle while resisting rust, stains and corrosion. The serrated edge results in a dramatically sharper knife which stays sharper longer. The edge on a Global knife is so large and prominent that it is easily seen with the naked eye and extends a quarter of an inch or more up from the tip of the knife.

From its modest inception, Global has developed into one of the most successful brands of professional kitchen knives in the world. Still crafted by hand in Yoshikin's factory in Niigata, Japan, Global knives are manufactured to extremely high and exacting standards. Global has attracted much acclaim over the years and received numerous awards. A thousand years ago, Japanese sword-smiths developed the high art of sword making to provide strong, sharp blades for the Samurai, the feared warrior caste. Like the Samurai swords before them, each knife is carefully weighted to ensure perfect balance in the hand. Global knives have been hand crafted in Japan using the same traditions and developed using the best raw materials available.

The best bread knife I have ever used

First, I like Global knives, partially because the handles fit my hand well. I know a few people who don't feel comfortable with them. As with any brand of knife, I recommend trying, as a bad grip can be dangerous.

I first tried my knife on a crusty baguette. I found that I could cut very thin slices with almost no crumbs. My old knife would have left me a pile. Next, I tried a soft potato hot dog bun. Again, very precise and no noticeable crumbs. Since then I have use it on bagels, dinner rolls, large sourdough loaves, and ordinary wheat bread sandwiches, all with perfect results.

I'm only sad that I waited as long as I did to buy it.

    Extremely well balanced knife

It is very sharp and very well balanced. I wanted this knife for a long time and was always shy to buy it because of the price tag. It is worth every penny! Easy to clean. Lies very well in the hand.
